1 - Summer meals - my recipes!

Tuna Fish Mayonnaise [TFM] - my first suggestion for fast, fresh, light lunches. Female company not provided.
Coca-cola is not mandatory but it goes great with TFM.
Vietnamese Beef requires too much time to prepare. However, if you're hungry and can't stand the idea of more mayonnaise, it might be worth the time. |
The Summer is here. Its hot and it brings new problems to those who don't have the guts to spend hour(s) heating up on a kitchen. Are you looking for quick, fresh Summer meals? Check my recipes... Sue Townsend's latest Adrian Mole diary, surprised readers in many ways. For example, you would never expect Adrian Mole to become a Cook Chief, though after watching BBC's latest cuisine shows, it is really understandable where the idea came from :) Mole's recipes couldn't be more different from the ones I am about to propose. He goes kind of hot and intestinal, while I'll dive as deep as fresh mayonnaise will let me... These "recipes", which technically are far from very accomplished, refer to meals for breakfast and lunch. No dinner. Sorry. My favorite Summer meal is a *tuna fish mayonnaise* that you can prepare in less than 5 minutes. Ingredients are a can of tuna fish ("Bom Petisco" and "Ramirez" are some suggested portuguese brands), plenty of "Helmans' Mayonnaise" and some fresh tomatoes. Coca-cola is a recommended extra. All ingredients should be cold (~ 4C). Wash and cut the tomatoes into a plate; open the tuna can, leak out the oil, then drop & mix the fish with the tomato slices. Finally, get strong on the mayonnaise, assuring that every bit of your mixture is "mayonnaised". Mix and remix. Enjoy. Check the picture for a tasty preview of what you can achieve. Again, the Coca-cola is not mandatory, but I strongly advise you to try it with this sort of meal. Lighter than my *tuna fish mayonnaise*, is the breakfast. However, it may require more than 5 minutes preparation time. I'll call my first breakfast suggestion *unnamed breakfast #1*. Ingredients are bread, ham, cheese and... mayonnaise, again... I confess I've been spending too much money on mayonnaise :( Handle it all like expected: open up the bread in two slices, then just layer ham, cheese and mayo, in quantities according to your own needs. Finally, another lunch suggestion, quite lengthy on preparation time. This meal might need well over 15 minutes of your precious life. I call it *vietnamese beef*. Go buy some beefs, not worrying about BSE - if you're infected, it was because of that burger you once ate, years ago... Then just grab a pot of "Asia Garden" or your local equivalent. "Asia Garden" is a vietnamese salad you can buy in most places, at least here in Portugal. Cook the beef, medium-rare. Drop it over a layer of vietnamese salad. Enjoy. Check the pictures, for mouth watering previews and e-mail me your own recipes. |
A superb still of TFM. I bet you are hungry now, right?
Breakfasts are not that fast. In fact my *unnamed breakfast #1* [UB1] takes longer than the TFM.
Vietnamese Salad sells cheap and it tastes different. Layers nicely below a beef. |
